The best way to pair wine and food

I heard the best explanation EVER on how to successfully pair wine with food on the Create channel recently. When pairing food and wine, we use either complementary or contrasting flavors. When using complementary flavors, a white wine would be paired with fish or chicken because both are lighter in texture and flavor. They're complementary. Beef and other red meats, which are bolder and heavier, would go with red wine as red wine is bolder and heavier. When pairing wine and food using contrasting flavors, the focus is on the sauce or seasoning of the dish. Pairing using contrasting flavors can be more challenging, more rewarding and more fun! I think I'm going to cook something special tonight – something with a sauce!
